Wild jujube, sesame and stone: the flavours of Dengfeng

Dengfeng's signature cake — the vegetarian su bing — began as travelling food for pilgrims and is now a protected regional craft. The wild jujubes are harvested on the mountain's dry slopes; the sesame paste filling uses stone-milled paste that industrial versions skip. Two families near the Academy still bake over stone ovens daily.
